Spaghetti all'Amatriciana is universally recognized as Lazio region's most famous pasta dish. The recipe has been registered in EU and UK and is officially associated with the City of Amatrice, in the Rieti province (Lazio), its birthplace. Spaghetti, guanciale, peeled tomatoes, and Pecorino Romano are the ingredients of this wonderful pasta. The Amatriciana was born as shepherds' main dish, albeit it did not include tomatoes and was in the past called Gricia (also known as White Amatriciana). Once tomatoes appeared in Europe as got imported from the Americas, the dish became the Amatriciana we know today. A very simple pasta dish with a rather strong personality. Amatriciana is also this class teacher's most favored pasta.
